I have always wanted to make Blueberry Squares. They look so delicious. The combination of oats, brown sugar, cinnamon and blueberries. Yummy!
As blueberries are still in season (they were when I made this) and the boys were keen to try them, I forged ahead to create our own Dairy Free Blueberry Squares.
The recipe is a combination of an adapted Canadian Living Blueberry Oatmeal Squares recipe from August 2007 and a much-loved recipe of my mom’s Date Squares.
Dairy Free Blueberry Squares
Blueberry Filling Ingredients
3 cups fresh blueberries
1/2 cup granulated sugar
1/3 cup freshly squeezed lemon juice
4 tsp cornstarch
2 tbsp water
Crumble Ingredients
11/2 cups whole oats (not instant)
11/2 cups whole wheat flour
1 cup Demerara sugar (brown sugar)
1/2 tsp baking soda
1/8 tsp kosher salt
11/2 tsp cinnamon
3/4 cup canola oil
Preparation of Blueberry Filling
In medium saucepan, bring the blueberries, sugar and lemon juice to a boil.
Reduce temperature and simmer until tender, 10 minutes.
Whisk the water with the cornstarch.
Whisk the cornstarch into the blueberry mixture and bring to the boil.
Stir until thickened, 1 minute.
Pour blueberry mixture into a bowl and cover with plastic wrap directly on the surface of the mixture.
refrigerate until cooled, 1 hour.
Preparation of Crumble
In a medium bowl, mix together the oats, flour, brown sugar, baking soda and salt.
Drizzle in the oil and stir until the oil is well incorporated into the dry ingredients.
(I use a clean hand to work in the oil)
Press 2/3 of the crumble mixture into a 8 by 8 glass dish.
Pour and spread blueberry filling evening over the packed in crumble mixture.
Sprinkle the remaining 1/3 of the crumble mixture over the top.
Bake at 350F for 30 minutes.
Allow to cool completely. Store in the refrigerator.
