Cleaning out the freezer is always an adventure…one never quite knows what one will discover in their travels!

This week has been all about cleaning, decluttering, trying to use what I have already in the freezer and fridge and spending less. I am inspired by Carla @ My 1/2 Dozen Daily. She is on Day 19 of her ‘No Spend for a Month Challenge’.

I decided to buckle down and tackle a week…I think I did quite good. I didn’t spend anything on Monday and Tuesday, did a big essential shop on Wednesday and picked up a few things on Thursday and today will also be a no spend day…going skating with Matthew’s class this afternoon.

All week we have eaten meals from the fridge and freezer combined. I even have meals set for tonight, Pizza Night with sauce from the freezer. Saturday and Sunday night’s dinners are also from the freezer…Lambs Shanks for Andy and I, Ribs for the boys and then Spaghetti with Meatballs for Sunday.

I thoroughly enjoyed the challenge…can you beleive I still have a few more meals left for next week…Dairy,Beef and Egg Free Cabbage Rolls and Dairy and Egg Free Pierogies are waiting to be devoured!

I have always wanted to make a Dairy, Egg and Soy Free Turkey Pot Pie. On a cold day, it feels like the perfect comfort food.

I checked out the fridge and used vegetables that I had on hand: carrots, celery, a few mushrooms, and peas in the freezer.I already had potatoes and garlic. I also had some chicken stock leftover from the weekend that needed finishing up…perfect.

For dessert, I found frozen Dairy,Egg and Soy,and Peanut/Tree Nut Free Butter Tarts and Dairy, Egg, Soy and Peanut/Tree Nut Free Brownies. A yummy discovery!

I adapted a Turkey Pot Pie recipe I found from one of my favourite resources online…Canadian Living. I love the simple sliced potatoes on the top…a nice crispy topping without all the fuss.

Dairy, Egg and Soy Free Turkey Pot Pie

1 onion finely chopped
2 celery stalks finely chopped
2 garlic cloves, minced
1 tsp dried thyme
3 cremini mushrooms (more if you have them), peeled and chopped
1/4 cup unbleached all-purpose flour
2 cups low sodium chicken stock
3 cups of a mixture of frozen peas and diced carrots
3 cups of diced cooked turkey
2 potatoes, thinly sliced
extra virgin olive oil
salt and pepper to taste

In a medium saucepan, heat 2 tbsp canola oil and saute onion, celery, garlic, mushrooms and thyme until soft.

Pour in chicken stock and bring to a boil.

Add turkey, peas and carrots. Salt and pepper to taste.
Pour into a casserole dish.

Dairy, Egg and Soy Free Turkey Pot Pie was served with roasted cauliflower and brussel sprouts. (I put them in for the last 20 minutes or so with the Turkey Pot Pie. I took them out before the broiling)

Tip: Michael and Andy both agreed that there should be more turkey.

P.S. Anyone who knows Matthew, knows vegetables are not his favourite. This dish was not met with much applause on his behalf. To give him credit, he did eat all his turkey and potatoes and tried some carrots…’not bad’ was his verdict. He was much happier indulging in a Brownie!
