When it comes to chocolate vs. vanilla…Matthew is all about chocolate and Michael loves vanilla…this dessert pleased them both!

Expressing one’s love through food is a common theme…somewhat made difficult when one lives day-to-day with food allergies.

Thankfully, there are yummy adaptions one can experiment with to create the dishes and treats your loved ones with food allergies will appreciate.

Dairy Free Strawberry Mousse

Valentine’s Day is fast approaching…this quick and easy Dairy Free Strawberry Mousse is an adaption of another one of my childhood favourites.

Dairy Free Strawberry Mousse for Valentine's Day

Topped with fresh stawberries…this light and creamy treat had Michael begging me to let him ‘dig in’!

“Oh, that looks soooo good…can I have some?”

With just two ingredients (not including the water)…this beautiful dessert ‘whips up’ in no time. Just the time it needs to set.

Topped with a chocolate covered strawberry…this would be the perfect dessert to celebrate Valentine’s Day with a loved one with a dairy allergy.

Dairy Free Strawberry Mousse

Dairy Free Strawberry Mousse topped with fresh strawberries

1 85g package of strawberry jello
1 200 g carton of chilled Belsoy Creamer 

In a medium bowl, empty contents of strawberry jello package.
Pour 1 cup of boiling water over strawberry jello and stir until dissolved.
Refrigerate until cooled and slightly thickened.
In another medium sized bowl, pour 1 cup of the Belsoy Creamer.

Whipping Belsoy Creamer with hand emulsifier for Dairy Free Strawberry MousseWhip Belsoy with an electric beater or a hand emulsifier until light and bubbly.
Pour whipped Belsoy into the partly set jello.

Whipping jello and Belsoy Creamer together with hand emulsifier for Dairy Free Strawberry Mousse

Continue to whip using the electric beater or hand emulsifier until the Belsoy and jello are combined.
Pour into a decorative bowl or individual serving dishes.
Refrigerate until set.
Decorate top with fresh strawberries.

Michael loved it with the fresh strawberries mixed in to it…which has reminded me of another childhood favourite dessert to adapt…my best friend’s mother’s Strawberry Bavarian recipe.

Tip 1:  If the jello completely sets before you have had a chance to whip in the Belsoy Creamer…do not fret…just microwave the jello, stir to loosen and continue with the recipe. (This happened to me, so I know it will all still work out in the end)

Tip 2:  My mom always made this recipe with lime jello and decorated the edge of the bowl with chocolate sprinkles.

Mmmmm…these little treasures were a hit!

Matthew loved this mini muffin version. He literally kept popping them in his mouth…I lost track as to how many he ended up eating. Very addictive!

Andy was also quite taken by the mini muffins…as was Michael.

Baking with milk may be easy…but when you have a dairy allergy, it is down right lethal!

Substituting for the milk and melted butter in a muffin recipe is simple…just replace the milk with either Natur-a Soy Beverage or Natur-a Rice Beverage and the melted butter with canola oil.

I also replaced the one egg with 2 tbsp of water and 1/2 tsp baking soda.

The orange juice was replaced with coffee…Matthew was not keen on the idea of orange in his chocolate muffin. As he likes the flavour of coffee…it seemed like a good substitution. Unfortunately, the coffee flavour did not come through…next time I would use a stronger coffee…Espresso.

I love that this recipe’s flour base is half wholewheat flour…the boys didn’t even seem to notice the extra built in fibre. An added bonus!

I stumbled upon this handwritten recipe (written by me as a teenager) for my favourite childhood bake sale treat…Chocolate Haystacks.

With Valentine’s Day just around the corner…I thought this chocolatey treat, filled with whole oats, coconut and rich cocoa, would be the perfect sweet indulgence to adapt for the boys.

I was right…they loved them!

I have no idea where the original version of this recipe came from…more than likely, I asked the mother of the child who brought in the Chocolate Haystacks for the bake sale.

Yes, even at such a young age I was drawn to recipes…I was and still do, ask anyone for a recipe if the dish is deemed to be delish!

Simple to make with no baking required…just measure, boil, mix and stir!

Adaptions for this recipe included:

1)  Butter…Earth Balance Buttery Vegan Sticks (for a soy free version substitute Earth Balance Soy Free Natural Buttery Spread.
2)  Milk…Natur-a Soy Beverage or for a soy free version, Natur-a Rice Beverage
3)  Cocoa…just make sure that the cocoa powder you use is dairy/peanut/tree nut free if you have these food allergies.

Always check all ingredient lists and allergy alert warnings no matter how familiar a product seems to you.

Dairy, Egg, Soy and Peanut/Tree Nut Free Chocolate Haystacks

A plate of Dairy, Egg, Soy and Peanut/Tree Nut Free Chocolate Haystacks

2 cups Demerara sugar
1/2 cup Natur-a Soy or Rice Beverage
4 cups whole oats
1/3 cup Earth Balance Buttery Vegan Sticks or Earth Balance Soy Free Natural Buttery Spread
6 tbsp cocoa (dairy free/peanut/tree nut free)
1 cup sweetened shredded coconut

In a medium saucepan, melt sugar and choice of Earth Balance.
Let it come to the boil.
Take off heat and quickly stir in oatmeal, coconut and cocoa. (I had them all pre-measured in a bowl)
Drop from spoon onto wax paper.
Let stand to firm.

Dairy Free Valentine’s Day Rice Krispie Hearts

A fun treat to create as an activity together in the kitchen or to make as a surprise!

I can tell you…when I first made these…my boys were definitely surprised!

“Wow! Is that chocolate on top?” Quickly followed up by Michael with…”What did you do with the extra bits left over?”

“Rolled them into balls and dipped them in melted chocolate…what else!”, I replied.

You should have seen Michael’s eyes widen in excitement!

Dairy Free Rice Krispie Hearts

Make a batch of Dairy Free Rice Krispie Treats.
Let them set for about 5-10 minutes.
Using a heart cookie cutter, cut out your hearts in the Rice Krispie Treats.

Place hearts on a large cooling rack.
Meanwhile, heat a small amount of water in a saucepan and let simmer.
Place a heat proof bowl on top of simmering water and add Enjoy Life chocolate chips. (use a double boiler if you have one)
Stir chocolate chips until they are melted.
Using a pastry brush or small spatula, drizzle melted chocolate across the Dairy Free Rice Krispie Hearts.

Dairy Free Rice Krispie Chocolate Balls

Roll leftover Dairy Free Rice Krispie Heart bits into small balls.
