Dairy and Peanut/Tree Nut Free Rice Krispie Squares

One of the first treats that I adapted was the much loved Rice Krispie Square.

Easy to make, take, and a kid pleaser.
(Prepackaged Krispie Squares were out of the question due to dairy ingredients.)

I received one of the best compliments from our neighbour’s son…a friend of my boys.  As he was munching down on a krispie square, he exclaimed, “You make the best Rice Krispie Squares!”  One of my boys replied, “She uses vanilla.” “Oh!” he replied.  “My mom doesn’t use vanilla.”

Nothing like pure vanilla to bring out the best in whatever you are making!

Dairy and Peanut/Tree Nut Free Rice Krispie Squares may not be considered glamorous, but they sure have stood the test of time. 

As they are a ‘staple treat in our home’, I felt the need to share the simple recipe that can be found on any box of Rice Krispie’s cereal. Just make sure the margarine is dairy free.  I like using Earth Balance Vegan Buttery Sticks.

Marshmallows, Earth Balance, pure vanilla and Rice Krispie's

  Dairy Free Rice Krispie Squares

1/4 cup dairy free margarine (Earth Balance)
40 large marshmallows
1/2 tsp pure vanilla
6 cups rice krispie cereal

Melt dairy free margarine in a large saucepan over medium heat.  Add the marshmallows stirring until all melted and combined.  Take off heat.  Stir in the pure vanilla.

 Stir in the Rice Krispie cereal until all combined. 

Scrape mixture into a greased (I spray with canola oil) 9 by 13 pan.  Spread and flatten carefully. (I wet my clean hands to press into pan)  Let krispies cool before cutting into squares.
